It’s been a few years since Vietnamese pho (pronounced “fuh”) first made its way into the public consciousness. This warm, savory soup with its diverse assemblage of herbs and veggies more than deserves its continued place in the culinary spotlight.

But has pho found its place in your kitchen yet?

If you haven’t tried making pho yourself, you’re missing out! This soup is easy to make with ingredients you already have in your fridge, and it’s super nutritious. Consider giving pho a place in your regular weeknight dinner rotation. (Or breakfast! In Vietnam a small bowl of pho is typically eaten in the mornings, like cereal.)

Much of pho’s nutrition comes from its heady broth: beef broth is a great source of collagen, which is important for skin and hair health, repair of your digestive tract, and joint maintenance. And the many spices simmered into the broth add more than flavor. Cinnamon, for instance, is a strong antioxidant which protects the body against tumors.

In fact, just about every ingredient in pho is bursting with health benefits. Grass-fed beef is a good source of conjugated linoleic acid, another anti-cancer molecule, and of omega-3’s. Mushrooms bring antiviral power and important minerals to the table. Cilantro helps the body detoxify heavy metals.
