It's hard to find a better party-pleasing appetizer than stuffed mushrooms! But why wait for a party? You can enjoy these on any weeknight as a healthy snack while binging your favorite show, or quickly whip up for last-minute guests.

We say "quickly" because you literally place all of the ingredients (minus the mushrooms) in a blender, stuff the mushroom caps, and that's it! After stuffing the mushrooms, you can either serve them raw, or bake them in the oven. Either way, they taste amazing! Do appetizers get much easier than this?

This recipe uses creamy alfredo sauce, heart-healthy cashews, the freshness of lemon, and savory herbs that will give your mouth an explosion of good, earthy flavor. Plus, you're getting a snack loaded with:

  • B vitamins
  • Niacin
  • Potassium
  • Protein
  • Heart-healthy fats

This is also a great way to introduce your kids to mushrooms. They'll love the fun, adorable look of the mushroom caps, and you can always sprinkle them with your favorite cheese, like parmesan. They are also a filling snack and can fuel your kids for all of their activities.
