This delightful salad is lemony and light with the bonus of crunchy toasted pine nuts and subtly flavorful parmesan. This is the perfect salad for any and every day. It’s a pleasing blend of textures and flavors and simple to prepare. My kids list it as their favorite salad!

There are a few rules for success. The kale must be baby kale, since the delicate flavors demand tender leaves. Toasting the pine nuts requires some care, so make sure to keep a close eye on the pine nuts as they toast. They will brown and then burn quickly if you forget about them for a few minutes.

This salad has provided an effective way to get nutritious kale into my kids’ diets. The nutritional benefits of kale are plentiful; it’s low in calories, high in fiber and full of antioxidants, iron, calcium and vitamins A, C, and K.
