Frozen Chocolate Covered Bananas with Shredded Coconut
This summertime treat takes you straight back to childhood! There was hardly anything better than biting into a frozen chocolate shell, rich banana, and sweet coconut on a hot day.
Chocolate, banana, and coconut are such a great taste combination, as the bitterness of dark chocolate helps tamper down the sweetness.
This recipe is also versatile, as you can choose any number of toppings in addition to or instead of the coconut, like crushed nuts of your choice.
While you can make these ahead of time, they should be eaten all at once, as the banana may become mushy as it thaws.

The best part, though, is this qualifies as a healthy treat!
- Bananas are rich in potassium and magnesium, which work together to help lower blood pressure and cholesterol and may even improve your heart health.
- Dark chocolate is a rich antioxidant that can fight off free radicals, which cause cellular damage. Dark chocolate is even proven to lift your mood and help manage stress!
- Coconut is contains fats known as medium-chain triglycerides, or MCTs, which are rapidly absorbed by your body and used for energy.
Chocolate Covered Frozen Bananas with Coconut
4 large bananas, cut in half
8 popsicle sticks
8-10 oz. dark chocolate chips
2 Tbsp. coconut oil
shredded coconut (for topping)
Slice bananas in half and place on a baking sheet lined with parchment paper. Stick one popsicle stick in on the cut end of each banana half.
Place bananas in freezer for 30 minutes (makes for easier dipping)
Meanwhile, add dark chocolate chips and coconut oil in a glass bowl fitted on top of a sauce pan with steaming hot water, allowing both to melt. Mix well.
Remove frozen bananas from freezer.
Dip frozen banana in the melted chocolate and coconut oil, cover all but 1/2 to 2/4 inches of the banana.
Sprinkle each dipped banana with shredded coconut and return to the lined baking pan. Repeat for all banana halves.
Return to freezer and freeze for 1 hour. Eat soon after removing from freezer to avoid the banana thawing and getting mushy.
