When I first heard "cowboy caviar," I had no idea what my friend was talking about. You just never hear those two words together! But once I found out he meant this amazing salad, I was all in.
It's seriously everything you love about Southwest food all in one sweet, savory, crunchy, fresh bowl! This is another recipe that you could totally customize, adding or taking away anything you wish. It's a completely foolproof recipe that even your kids will enjoy (and will love to make along with you).

Black Beans and Black-Eyed Peas
Just one 15 oz. can each of black beans and black-eyed peas (respectively) gives you:
- Protein: 25 grams / 22 grams
- Iron: 45% / 40%
- Fiber: 100% / 76%

Again, there are no limits to this salad! Add your favorite cheeses, spices, veggies, whatever strikes your mood. Not a fan of black-eyed peas? Just double up on the black beans. We hope you enjoy this!
Cowboy Caviar Salad
15 oz. can of black beans, drained and rinsed
15 oz. can of black-eyed peas, drained and rinsed
2 medium to large tomatoes, seeded and diced
1.5 cup frozen sweet corn, thawed (or 15 oz. can, drained)
1 avocado (pitted, peeled, chopped)
1 red bell pepper, chopped
1 orange bell pepper, chopped
1/2 medium red onion, diced
1 jalapeno, seeded and finely chopped
1/4 cup fresh cilantro, chopped
1/4 cup lime juice
1 Tbsp. raw organic honey
1 tsp. chili powder
1 tsp. cumin
1/3 cup olive oil
salt, to taste
Combine all dressing ingredients in a tightly sealed Mason jar and shake vigorously.
Add all salad ingredients to a large salad bowl. Toss gently to combine.
Drizzle with dressing right before serving.
