It's fall season, Halloween is around the corner, and what better to warm you on those dark nights than a creamy bowl of spiced pumpkin soup in super quick time and all in your Instant Pot.
The evenings are getting darker, the leaves are falling and thoughts turn to cozy nights in front of the fire. If like me, you are constantly pushed for time then this is the perfect recipe for your Instant Pot, packed full of nutrients and immune-boosting vitamins, particularlyVitamin Athis will satisfy the hungriest of bellies.
Serve it with warm buttered crusty bread or for a more filling dinner with grilled cheese sandwiches.
1 pumpkin peeled, deseeded, and chopped (you may use pureed pumpkin if so add at stage 3)
2 cloves garlic sliced
2 red chilies deseeded and sliced (or a few shakes of hot sauce)
1 tsp smoked paprika
1/2 tsp thyme
1/4 tsp salt
1/4 tsp black pepper
2 cups chicken or vegetable broth
1/8 cup cream (optional)
Directions
Press saute button on the Instant Pot/Ninja and add oil or butter and warm for 2 mins
Add the onion, carrot, pumpkin, garlic, and chili, and saute for 5 mins
Add all the remaining ingredients and turn off
Seal the lid and pressure cook for 10 mins and allow to naturally release
Blend the soup with a stick blender
Serve with a swirl of cream and warm crusty bread or for a special and more filling treat with grilled cheese sandwiches.
Recipe Note
This soup can be made in the oven/stovetop if you do not have an Instant pot. Simply roast your pumpkin in the oven with a little oil until soft (approx 40 mins)
Transfer to a dutch oven and add the onion, carrot, garlic, and chili, and saute for 5 mins.
Add remaining ingredients, bring to a boil, reduce heat and then simmer for around 15 mins.
