“No bake” and “energy” – we love the sound of that! These no-bake chocolate energy bites are the perfect pick-me-up snack, and can even work as a quick on-the-go breakfast for busy mornings. Kids and grown-ups alike will love these treats, and will appreciate how filling and delicious they are.
Even better – they can be made in advance and keep well for several days and up three months in the freezer.
What Are Energy Bites?
Energy bites (also known as protein bites) are a sweet snack made of good carbs, protein, fiber, and healthy fats. What's great is that you’d never know you were eating something so healthy, thanks to yummy ingredients like nut butter, vanilla, honey, coconut, and dark chocolate chips.
The spotlight ingredient, rolled oats, not only holds all the ingredients together, they’re full of fiber, protein, iron, and complex carbohydrates. All of that translates to energy and keeping you full.
Healthy Snack, Healthy Ingredients
This recipe uses naturally sweet ingredients (no added white sugars!) and can be customized to be allergy-friendly, as you can use any type of nut butter or nut alternative butter. You can also adjust the sweetness depending on the type of chocolate chips you use. The higher percentage of pure cacao, the higher the benefits. Although dark chocolate is more bitter, you won't notice it thanks to the natural sweetness from honey, vanilla, and coconut.
Make these energy balls all your own! Customize with:
- Nut butter of your choosing (peanut, almond, cashew, Sun Butter, etc.)
- Chocolate of your choosing (milk, semi-sweet, dark)
- Dried fruits like cranberries, pomegranates or blueberries
- Extra vanilla or honey to adjust sweetness and flavor
- Toasted shredded coconut (instead of raw)
- Add nuts for extra crunch
- Add a scoop of collagen powder!

The Best No-Bake Chocolate Energy Bites
1 cup old fashioned rolled oats (not quick or instant)
2/3 cup shredded coconut
1/2 cup creamy peanut or almond butter
1/2 cup semisweet mini chocolate chips
1/3 cup honey (organic is best)
1 tsp. vanilla extract
Mix all ingredients in a large glass mixing bowl
Cover in plastic wrap and chill in refrigerator for 30 minutes (makes for easier handling)
On a sheet pan lined with parchment paper, form tablespoon-sized balls and space evenly on pan
Let balls set for 15 minutes
Store in air-tight container for up to 1 week, or freeze in freezer-safe bags or containers for up to 3 months
Shredded coconut - use sweetened or unsweetened, your preference.
Nut butter or alternative - you can use any type of creamy nut butter or nut butter alternative, such as Sun Butter, which is made from sunflower seeds.
Chocolate - reap the health benefits of cacao by using dark chocolate chips.
