3-4 lbs beef round roast (or a cut of your choice, keeping it lean)

2 tbsp olive oil

4 cloves garlic, minced

2 tsp fresh rosemary, chopped

2 tsp fresh thyme, chopped

Salt and pepper, to taste

1 cup beef broth (low sodium)

2 tbsp balsamic vinegar
-
2 tbsp Dijon mustard

1 lb small potatoes, halved
-
1 lb carrots, peeled and cut into chunks

1 large onion, quartered
Directions
Preheat your oven to 375°F (190°C). In a small bowl, mix together olive oil, garlic, rosemary, thyme, salt, and pepper. Rub this mixture all over the roast, ensuring it's fully coated
Heat a large oven-proof skillet or roasting pan over medium-high heat. Add the roast and sear each side until golden brown, about 3-4 minutes per side. Remove the roast and set aside
In the same pan, pour in the beef broth to deglaze, scraping up any browned bits from the bottom. Stir in the balsamic vinegar and Dijon mustard. Add the prepared vegetables to the pan and toss them in the juices
Place the seared roast on top of the vegetables. Insert a meat thermometer into the thickest part of the roast, if available
Transfer the skillet or pan to the oven and roast until the meat reaches your desired doneness (about 120°F for rare, 130°F for medium-rare, 135°F-140°F for medium, checking after about 60-75 minutes)
Let the roast rest for at least 10 minutes before slicing. This allows the juices to redistribute throughout the meat, ensuring it’s juicy and flavorful. Serve slices of the roast with the roasted vegetables on the side
