1 can (15 ounces) of canned pumpkin puree

1 can (15 ounces) of chickpeas (garbanzo beans)

1/4 cup tahini

2 cloves garlic, minced

2 tablespoons extra-virgin olive oil, plus more for drizzling

Juice of 1 lemon

1 teaspoon ground cumin

1/2 teaspoon ground paprika

1/2 teaspoon ground cinnamon

Salt and pepper, to taste

Optional toppings: pumpkin seeds, chopped fresh parsley, a dash of paprika
Directions
Start by draining and rinsing the canned chickpeas under cold water to remove excess salt and starch
In a food processor, add the canned pumpkin puree, chickpeas, tahini, minced garlic, extra-virgin olive oil, lemon juice, ground cumin, ground paprika, and ground cinnamon
Blend the ingredients until smooth and creamy. You may need to scrape down the sides of the food processor and blend a few times to achieve the desired consistency. If the mixture is too thick, you can add a bit more olive oil or lemon juice to thin it out
Taste the pumpkin hummus and season with salt and pepper to taste. Adjust the spices if needed
Transfer the pumpkin hummus to a serving bowl, cover, and refrigerate for at least 30 minutes before serving. Chilling allows the flavors to meld together
