Ingredients

1 1/4 cups of all-purpose flour

1/2 cup of cold, dairy-free butter cut into small cubes

1/4 teaspoon of salt

3-4 tablespoons of iced water

1 bottle (12 oz) of Just Egg (equivalent to 8 large eggs)

1 cup of your favorite non-dairy milk (such as almond, soy, or oat)

1 cup of diced mixed vegetables (bell peppers, spinach, onions, mushrooms, etc.)

1/2 cup of vegan cheese (choose your favorite flavor)

1/2 teaspoon of turmeric (for color and flavor)

1/2 teaspoon of garlic powder

Instructions
In a food processor, combine the flour, cold dairy-free butter, and salt. Pulse until the mixture resembles coarse bread crumbs.
Gradually add iced water, one tablespoon at a time, while pulsing the processor. Stop once the dough begins to come together.
Transfer the dough to a clean surface and form it into a disk. Wrap dough in plastic wrap and refrigerate for at least 30 minutes to chill.
Preheat your oven to 375°F (190°C).
Roll the chilled dough on a lightly floured surface and into a circle, making sure it's large enough to fit your pie dish.
Carefully transfer the rolled dough to a greased 9-inch pie dish and trim any excess dough hanging over the edges.
In a mixing bowl, whisk together the bottle of Just Egg, non-dairy milk, turmeric, garlic powder, salt, and pepper. This will be your quiche base.
Sprinkle the diced mixed vegetables and vegan cheese evenly over the prepared pie crust.
Pour the Just Egg mixture over the vegetables and cheese, ensuring an even distribution.
Place the quiche in the preheated oven and bake for 35-40 minutes, or until the quiche is set and the top is lightly golden.
Remove the quiche from the oven and let cool for a few minutes before slicing.
