Ingredients
-
1 ½ pounds ground turkey or pork
-
1 cup breadcrumbs (you can use whole wheat or gluten-free)
-
1/2 cup milk (dairy or non-dairy)
-
1/2 cup finely grated Parmesan cheese
-
1/2 cup finely chopped onion
-
1/3 cup finely chopped bell pepper (any color you prefer)
-
2 cloves garlic, minced
-
2 eggs, beaten
-
1 teaspoon dried thyme
-
1 teaspoon dried oregano
-
1 teaspoon salt
-
1/2 teaspoon black pepper
-
1/4 cup ketchup
-
2 tablespoons brown sugar
-
1 tablespoon Worcestershire sauce
For the glaze:
Directions
Preheat Air Fryer/Instant Pot/Ninja to 350°F (175°C).
In a large mixing bowl, combine the ground meat, breadcrumbs, milk, Parmesan cheese, chopped onion, chopped bell pepper, minced garlic, beaten eggs, dried thyme, dried oregano, salt, and black pepper. Mix everything together until well combined.
Form the turkey mixture into a loaf shape and place it a aluminum foil tray and into the air fryer basket.
In a small bowl, mix together the ketchup, brown sugar, and Worcestershire sauce until the brown sugar is dissolved.
Brush the glaze evenly over the top of the meatloaf.
Place the basket in the preheated air fryer and cook the meatloaf at 350°F (175°C) for about 30-35 minutes. Cooking times may vary depending on the size and thickness of your meatloaf. To ensure the meatloaf is fully cooked, you can use a meat thermometer to check that the internal temperature reaches 165°F (74°C).
After about 20 minutes of cooking, you can open the air fryer and check on the meatloaf. If the top is browning too quickly, you can loosely cover it with a piece of aluminum foil to prevent over-browning.
Once the meatloaf is cooked through, carefully remove it from the air fryer and let it rest for a few minutes before slicing. This helps the juices redistribute and makes slicing easier. Slice the meatloaf and serve it with your favorite sides.
Recipe Note
Top tips
The secret to a juicy meatloaf is a blend of fatty and non-fatty meats, gentle mixing, and allowing enough time for the meatloaf to rest.
